A bit of brandy history: Laird’s America opened a brandy distillery in 1780, making it the oldest apple brandy producer in America. Laird distilled applejack (a blend of apples) and other fruit brandies. Remarkably Laird Distillery is still in existence and The Brandy Bar offers Laird’s applejack in our cocktails. The abundance of naturally available fruits for processing as compared to the labor-intensive planting and harvesting of grains resulted in young America’s adopting brandy as the preferred drink. Also a few years later in the young American Colonies, George Washington began commercial distilling in 1797 at the urging of his Scottish farm manager, James Anderson, who had experience distilling grain in Scotland. With this experienced help, Washington became one of the largest distillers with five copper stills operating 12 months a year.
